Unique, traditional, moreish

True to form, Reto Güntensperger has taken a young Emmentaler on a journey into
an entirely different place; namely his cellars in Bütschwil. By ageing for 12 months at
a higher humidity and with a special brine mix, the Doppelzentner (Hundredweight)
is a unique and delightful creation that retains the accessibility and “sessionability” of its Emmentaler roots whilst taking on new level of flavour from its time in the care of
Reto and his team.

Rich dairy notes quickly blossom into a more herbaceous and spicy flavour, balanced by a delicate sweetness throughout for a moreish savour. Delicate heat on the finish in older profiles.                 This cheese has a supple bite and often develops some casein crystals from age, partnered with distinctive large eye formation.
