Rauch Mutschli

Smoky, balanced, tasty

Rauch Mutschli is a delightful, creamy young cheese smoked over beech wood. Washed during the ageing process, this cheese has a welcoming smoky flavour which is approachable and in no way overwhelming. An even textured, consistent and slightly open ivory coloured cheese. The mouthfeel is a pudgy, elastic paste that’s contrasted by the slightly chewy edible rind.

“Rauch” meaning smoked and “mutschli” being Swiss-German for smaller format wheels that traditionally are made from the curd left in the vat from single-herd production, after the bigger cheese moulds have been filled.
